Cast Iron Roasted Vegetables 1 & 2



     I came up with these simple recipes about 3 weeks ago.  Jason and I needed some new flavor combinations this go around with Paleo.  These were also my first go’s in getting back into a cooking groove again.  Jason uses the cast iron skillet all the time but I haven’t really played around with it too much.  So I thought why not give everything a try and see what happens.   Needless to say, I am happy with the results and wanted to share.  These really came out delicious and are entirely Paleo.  I highly recommend trying them if you are looking for some new flavor combinations for your vegetables.  And both have bacon.   So I mean...


AUTUMN IN A CAST IRON


*Preheat Oven to 400 Deg. F.
*Items Needed - Cast Iron Skillet and Ingredients
**CAUTION: Cast Iron Skillet is extremely hot while and after being in Oven.  Use oven mitts.

Ingredients:
  • 1 Sweet Potato [Cubed]
  • 2 Parsnips [Sliced]
  • 2 Carrots [Sliced]
  • 1 package of whole Bella Mushrooms [Halves the larger mushrooms]
  • 3 Cloves Garlic [Smashed] 
  • 3 Strips Bacon [Sliced into 1/2 inch pieces]
  • Kosher Salt
  • Fresh Ground Black Peppercorn


How-To:
  • Toss ingredients together in large bowl.  
  • Place ingredients in Cast Iron Skillet.
  • Season again if like.
  • Place in pre-heated oven.
  • Roast until Bacon is beautiful and crispy.
  • Take out, place on stove, and let cool.
  • Serve warm.


CAST IRON ROASTED BRUSSELS SPROUTS & VEGETABLES


*Preheat Oven to 400 Deg. F.
*Items Needed - Cast Iron Skillet and Ingredients
**CAUTION: Cast Iron Skillet is extremely hot while and after being in Oven.  Use oven mitts.

Ingredients:
  • 1 lb Brussels [Halved]
  • 1 Sweet Potato [Cubed]
  • 1/2 Med. Yellow Onion [Chopped/Diced]
  • 2 Cloves Garlic[Sliced]
  • 3 Strips bacon [Sliced into 1/2 inch pieces]
  • Kosher Salt
  • Fresh Ground Black Peppercorn

How-To:
  • Toss ingredients together in large bowl.  
  • Place ingredients in Cast Iron Skillet.
  • Season again if like.
  • Place in pre-heated oven.
  • Roast until Brussels are crispy and Bacon is just cooked.
  • Take out, place on stove, and let cool.
  • Serve Warm.
