Jaiva



                I have another new recipe to share!  I wanted to give Jason something fresh last night, that fulfilled our need for protein.  We are both tired of chicken and I didn’t really want red meat.  I suggested Ceviche, and he suggested Jaiva.  Together we decided I should make something similar to a classic Ceviche with Imitation Crab Meat and this is what we got.  Yummm!


JAIVA
CLASSIC CEVICHE WITH IMITATION CRAB








  
What You Need:
  • 1 1/3 Lb Imitation Crab Meat
  • 1 C Fresh lime Juice – 8-10 limes
  • 1 medium White onion ½ in dice
  • 2-3 medium -large tomatoes ½ in dice
  • 1 small Cucumber 1/4 in dice
  • 1 Anaheim Chile ¼ in dice
  • Canned jalapenos ½ in dice
  • 3 Tbs fresh squeezed Orange Juice or
  • Cilantro
  • Avocado
  • 1-2 Tbs Extra Virgin Olive Oil
  • Salt
  • Tostadas or Tortilla Chips

How – To:
  1. Combine crab meat and lime juice in a bowl with cover and marinate for at least 2 hours. 
  2. Combine onion, tomatoes, Anaheim Chiles, jalapenos, orange juice, and Cilantro in a med. Bowl.  Cover and let marinate.  * Think Pico De Gallo when dicing.
  3.  After the Fish has marinated for at least 2 hours, chop the crab meat and combine both bowls.  Let all the ingredients marinate and bond together for at least another 2 hours.*You do not have to let marinate, you can go ahead and serve at this point if you wish.  I definitely recommend letting the flavors mingle for at least 2 hours.
  4.  When ready to serve, add EVOO, salt to taste, more cilantro for garnish, and sliced or diced Avocado.
  5. Serve on Tostadas or with Tortilla chips!
